Onion – 2 medium-sized
Ginger – 1-inch piece
Tomato – 3 medium-sized
Potato – 2 medium-sized
Sev – 100 grams
Green chili – 2-3
Salt – to taste
Red chili powder – 1/2 teaspoon
Coriander powder – 1 teaspoon
Garam masala – 1/2 teaspoon
Oil – 1 – 1 1/2 tablespoons
Coriander leaves – for garnish
Water – 1 1/2 glasses

How to make sev tamatar

To make Sev Tomato Curry, start by heating oil in a pressure cooker. Add chopped onions and sauté them until they turn golden brown. Meanwhile, add grated ginger and mix well. Once the onions are golden, add chopped tomatoes and sauté for 5 minutes. Then, add salt, red chili powder, coriander powder, and half a glass of water. Mix everything thoroughly.

Close the lid of the pressure cooker and cook on high flame for 3–4 whistles. Turn off the flame and let the pressure release naturally. Open the lid, turn the flame back on, and add potatoes. Sauté (bhunna) them well, then close the lid again and cook for one more whistle. Turn off the flame and let the cooker cool down.

Once cool, open the lid and add sev to the curry. Close the lid again and cook for one more whistle. After the final whistle, let the cooker cool down completely. Open the lid, turn the flame on, and add garam masala and chopped green chilies. Mix well and let the curry simmer uncovered on low flame for 4–5 minutes. Turn off the flame.

Your delicious Sev Tomato Curry is ready to serve.

Tips

In Sev Tomato Curry, we added green chilies at the end. However, you can add them while adding the sev as well. Whether raw or cooked, green chilies enhance the flavor of the curry.

You can adjust the quantity of salt and chili according to your taste preferences.

For this recipe, we used diced tomatoes. If you prefer, you can use tomato puree instead. To enhance the flavor further, you may also add 1 teaspoon of soy sauce or Kitchen King Masala.

Since we prepared this curry using onions, we skipped adding turmeric. However, you can include it if you like.
