Bottle gourd – 1
Onion – 2 medium-sized
Green chilies – 4
Flour (atta)
Ghee or oil – for frying the parathas
Salt – to taste
Red chili powder

How to make bottle gourd paratha

 Take a large mixing bowl and knead the dough using water. Keep the kneaded dough aside. Finely chop the onions and green chilies. Peel and clean the bottle gourd, wash it with water. If it’s large, cut it into 2-3 pieces and grate it. Squeeze out the excess water from the grated bottle gourd and set it aside. Take the grated bottle gourd, chopped onions, and green chilies, and mix them together in a bowl. Add salt and red chili powder to the mixture and combine well. Take a portion of the kneaded dough and roll it into a ball. Roll it out a bit using a rolling pin. Apply some ghee on the rolled dough and spread it evenly on all sides. Place the filling of bottle gourd, onions, and green chilies on top, then fold the edges of the dough over the filling to close it. Sprinkle some dry flour on the stuffed dough and roll it out gently using a rolling pin, being careful not to let the filling spill out. Heat a tawa (griddle) and add a little oil. Place the rolled paratha on the tawa and cook it on both sides. Flip it over and apply some oil on the other side. Keep flipping until the paratha is golden and crispy. Once the paratha is cooked, remove it from the tawa. Spread some ghee or butter on top while it’s still hot. Serve with yogurt, raita, pickle, or papad.

Tips

When making bottle gourd paratha, don’t add too much filling. Otherwise, the paratha won’t roll out properly and there’s a risk of the filling spilling out if the paratha tears.

You can adjust the amount of salt and red chili powder in the paratha as per your preference, as we’ve already added green chilies to enhance the flavor.

Always use raw bottle gourd for making paratha. However, if the bottle gourd is ripe, remove the white part from the center, then grate it and use it for the filling in the paratha.
