Oil – 2 tablespoons

Onions – 2

Tomatoes – 3

Green chili – 1

Bay leaf – 1

Cardamom – 2

Cinnamon – 2 small pieces

Cloves – 2

Eggs – 5

Rice – 1 cup

Red chili powder – as per taste

Salt – as per taste

Biryani masala – as per taste

Ginger-garlic paste – 2 tablespoons

Roasted gram flour (bhoona besan) – 2 tablespoons

Yogurt – 3 tablespoons

Black pepper powder – as per taste

Coriander leaves – for garnish

How to make egg biryani

To make egg biryani, first, boil the eggs and cook the rice. Now, heat oil in a pan and fry the onions. Once fried, remove them and place them on a separate plate. In the same pan, add a little oil and all the whole spices. Then, add the ginger-garlic paste and cook it. After that, add the chopped tomatoes.

Cook the tomatoes well until they soften. Then, add the yogurt and mix it thoroughly. When the gravy starts releasing oil, add salt, black pepper powder, red chili powder, and biryani masala. Cook the spices for 2-3 minutes. Now, add the boiled eggs with a little water and cover the pan.

Keep the flame on medium heat. Once the eggs are well coated in the gravy, add the rice. Mix it gently and then top it with the fried onions. Turn off the gas flame. Your egg biryani is ready! You can serve it with raita or plain yogurt.

Tips

You can also add a few saffron strands on top of the biryani, though this is optional. I skipped it in this recipe.

Here, I roasted the gram flour (besan) without using any oil.

Also, don’t add too much water to the egg gravy. Keep the water quantity minimal to maintain the right consistency.
