Asafoetida (Hing) – 1/4 teaspoon
Cumin (Jeera) – 1/2 teaspoon
Ginger – 1-inch piece, finely chopped
Oil – 2 large vegetable spoons
Potatoes (Aloo) – 3 medium-sized
Cauliflower (Phool Gobhi) – 1/2 kilogram
Tomatoes – 3 medium-sized
Green Chilies – 3-4
Salt – to taste
Turmeric – 1/2 teaspoon
Red Chili Powder – 1/2 teaspoon
Coriander Powder – 1 teaspoon
Kasuri Methi (Dried Fenugreek Leaves) – 1 teaspoon
Kitchen King Masala – 1/2 teaspoon
Garam Masala – 1/2 teaspoon
Coriander Leaves – for garnish

How to make aloo gobhi

First, heat oil in a pan. Add hing, cumin, and ginger to it. Now, add the potatoes and sauté for 3-4 minutes. Cover and let the potatoes cook for 10 minutes. After removing the lid, add kasuri methi, turmeric, salt, and cauliflower, then mix everything together. Cover again and let it cook on low heat.

After some time, remove the lid to check. The potatoes and cauliflower should be slightly soft. Now, add tomatoes, green chilies, red chili powder, coriander powder, kitchen king masala, and garam masala. Mix everything well and cook on low heat with the lid on.

After a while, check again, and you should notice that the oil has started to separate from the curry. Your Aloo Gobi is now ready to serve.

Tips

When making Aloo Gobi, ensure that you add the cauliflower only after the potatoes have softened a bit. This is because cauliflower takes longer to cook than potatoes.

If you are adding tomatoes to the Aloo Gobi, make sure to add them last, or only after the potatoes have cooked well. If you add tomatoes early, their acidity will prevent the potatoes from cooking properly, and the vegetable will remain undercooked.

When preparing Aloo Gobi, wash the cauliflower once with clean water. Then, warm some water, add salt, and mix it. Place the cauliflower in this salted water for a while to eliminate any unpleasant smell. Afterward, rinse it with clean water before using it in the vegetable preparation.
