Boiled rice – 2 cups
Spinach – 1/2 cup
Green chilies – 2
Ginger – a small piece
Garlic – 4-5 cloves
Oil – 4-5 tablespoons
Carrot – 1
Beans – 8-10
Bell pepper – 1/2
Corn kernels – 3-4 tablespoons
Peas – 2-3 tablespoons
Bay leaves – 2
Cardamom (big) – 2
Cinnamon – 2-3 sticks
Garam masala – as per taste
Salt – as per taste
Red chili powder – as per taste
Turmeric – 1/2 teaspoon

How to make palak pulav

To make spinach pulao, first, boil the rice. Now, heat oil in a pan. Add bay leaves, cardamom (big), and cinnamon. Next, add chopped onions and caramelize them lightly, stirring well. Now, add the chopped vegetables—carrot, bell pepper, beans, corn, peas, and green chilies. Cover the pan and let the vegetables cook well.

When the vegetables are cooked, add the chopped spinach and cook it well. Once the spinach is cooked, add the ginger, garlic, and spinach paste. Cook it for 5 minutes. Now, add salt, turmeric, red chili powder, and garam masala. Mix the spices well, then add the boiled rice. Stir it carefully so that the rice mixes well with the spices and vegetables. Turn off the gas flame. The spinach pulao is ready. Serve it hot with raita or yogurt.

Tips

To make the rice fluffy, add a little lemon juice while boiling the rice.

You can also add pieces of paneer to the spinach pulao, which will enhance the flavor of the pulao. If you are making pulao for children, you can skip the green chilies.
