In the summer season, saying no to ice cream is something no one would agree to. And anyway, who doesn’t like eating ice cream? From kids to the elderly, everyone is fond of ice cream. By the way, do you know that ice cream is called Sheetal Mishtaan or HimSheetal Mishtaan in Hindi? However, in common usage, the word “ice cream” is more widely used. Just like making vanilla ice cream is very easy, making tutti-frutti ice cream is also a breeze. You don’t need to follow any special steps to make it. Just as vanilla ice cream is made by mixing three ingredients that are easily available at home, tutti-frutti ice cream can also be made in a similar way.

Similarly, the recipe for tutti-frutti ice cream is also made by mixing just three ingredients. The only difference is that here, we replace vanilla extract with orange essence. And since this ice cream is called tutti-frutti, it is given the flavor of tutti-frutti. Once it is well-set, the taste it offers is absolutely delicious and amazing.

Ice cream is set using a refrigerator or a deep freezer. Additionally, to achieve the perfect texture during the freezing process, ingredients like cream, sugar, and stabilizing agents are used, which make the ice cream soft and creamy. Typically, steel or aluminum utensils are used for setting ice cream, as these metals cool quickly, allowing the ice cream to set properly. Moreover, some people also use airtight plastic containers to prevent an icy layer from forming on the ice cream, thereby preserving its freshness.

While making ice cream, eggs are sometimes used, but not everyone prefers egg-based ice cream. Creamy ice cream cannot be made using cow’s milk alone. Therefore, it is better to use buffalo milk or packaged milk with a good fat content to achieve a creamy texture. There’s no match for ice cream when it comes to taste, but kulfi is equally delightful.

In my recipe, I have not used cornstarch or custard powder to thicken the milk. Instead, I thickened the milk on the stove and mixed it with sugar and condensed milk. Later, I folded it with whipping cream. After freezing it for 7–8 hours, I had perfectly delicious tutti-frutti ice cream ready to enjoy.

Using orange essence and color in tutti-frutti ice cream is not absolutely necessary; they can be skipped. Since vanilla ice cream is white, we used orange color and essence here to make the tutti-frutti ice cream look different. Orange ice cream can also be made without using milk. If you wish to prepare even more instant ice creams, there are plenty of quick and easy options to explore.

Beat the whipping cream until stiff peaks form, and then add condensed milk according to your desired sweetness. Mix gently. Add orange essence and sprinkle tutti-frutti on top. Transfer the mixture into an ice cream box and freeze it for 7–8 hours. Your instant tutti-frutti ice cream is ready!

How to make tutti fruit ice cream recipe

To make tutti-frutti ice cream, first take a non-stick pan and pour 1 liter of milk into it. Heat it until it comes to a boil. Add 1/2 cup of sugar and let the milk thicken. Once the milk thickens, turn off the flame. Allow the milk to cool slightly, then mix in the condensed milk (Milkmaid).

In another bowl, take whipping cream. Add a few drops of orange essence and orange color to it. Place this bowl over another bowl filled with ice. Using an electric beater, whip the cream until stiff peaks form.

Gently mix the condensed milk mixture into the whipped cream using a spatula. Fold carefully until well combined. Sprinkle tutti-frutti on top and pour the mixture into an ice cream box. Freeze it for 7–8 hours.

After 7–8 hours, check it. Your delicious tutti-frutti ice cream is ready to enjoy.

Tips

Whipping cream not only gives the ice cream a creamy texture but also increases its fat content. Therefore, if you prefer, you can use low-fat milk as well.

Before beating the whipping cream, take it out of the freezer and place it in the refrigerator for a few hours. This ensures that the cream remains cold and some part of  ice particles, making it easier to beat. Once beaten, the cream will hold its texture longer without breaking down quickly.

If you like your ice cream sweeter, you can adjust the quantity of condensed milk or sugar according to your taste preferences.

What to do if you forgot to refrigerate whipping cream and need to beat it instantly?

Don’t worry! Simply place the whipping cream in lukewarm water for 10–15 minutes. This will help melt any ice inside the cream, making it easier to beat. However, ensure that no water enters the cream while doing this.

Should temperature be considered while beating whipping cream?

Yes, it’s important. While temperature may not be an issue during winter, in the summer, the room should be cool when whipping cream. You can opt for an air-conditioned room for this process. In a cooler environment, the cream will whip faster and hold its texture better for longer.
