Shrikhand is made from thick curd, which is called hung curd in English. It is very easy to make. Tasty Shrikhand can be prepared quickly. I have used fresh cream to make Shrikhand.

It is whisked well and made with sugar and dry fruits. A very funny incident from my life is associated with the Shrikhand recipe. This dates back to the time when I was in 12th grade.

I had Home Science as a subject. It was exam time, and we had to do a practical. In this, all the students had to prepare a dish.

Based on this, we were to be graded for the practical exam. Everyone told their dish to the class teacher.

I had to choose a recipe that would take less time and stand out from the rest. So, I chose Shrikhand. On the day of the exams, all the students were giving their 100% effort in their recipes.

Everyone wanted to score very good marks. Despite all the hard work, the senior ma’am did not taste anyone’s recipe. When my turn came..

I served the chilled Shrikhand in front of ma’am. Not much, just a spoonful, but I was tempted to taste it too. However, I couldn’t do that.

As soon as I served the Shrikhand to ma’am, it felt like she had been waiting for it. Ten minutes later, my bowl of Shrikhand was completely finished, accompanied by lots of compliments. Should I call it luck or my choice.

That day, senior ma’am was fasting. My dish worked perfectly! And in that practical exam, I scored the highest marks. Although, in my heart, I did wish I could have tasted just a little bit of the Shrikhand.

Yogurt – 1 cup
Sugar – to taste
Fresh cream – 2 tablespoons
Nutmeg powder – 1/4 teaspoon
Cardamom powder – 1/4 teaspoon
Almonds – 4-5
Pistachios – 4-5
Cashews – 4-5
Saffron strands – soaked in water

How to make shrikhand

To make Shrikhand, hang the yogurt in a muslin cloth for 2-3 hours to allow all the water to drain out. Once the water is completely drained, take a bowl and add cream to the yogurt. Whisk it using a whisker. After whisking, add powdered sugar, nutmeg powder, and cardamom powder, and mix it well with a spoon. The Shrikhand is ready! Garnish it with cashews, almonds, pistachios, and saffron strands, and serve.

Tips

Adding cream to the Shrikhand is optional. You can make it with just yogurt as well, if you prefer.
