Eid is approaching, so why not decorate the blog with a special Sheer Khurma recipe this time? It’s a delicious Eid dessert, full of the flavors of dry fruits. Sheer Khurma is essentially a type of vermicelli pudding made with dry fruits, and primarily dates. This dessert is made not only in India but also in Afghanistan and parts of the Middle East. It wouldn’t be an exaggeration to say that the Eid festival feels incomplete without Sheer Khurma. Many of my childhood memories are filled with the sweetness of Sheer Khurma. My mom’s best friend, who came from a Muslim background, was lucky enough to get married in the same city. So, regular meet-ups, laughter, and jokes were a part of our routine. But one thing she never forgot to offer us was Sheer Khurma. For us kids, it was always specially made with an abundance of dry fruits.

Vermicelli and milk can easily be used to prepare a delicious pudding, but when dates are added to it, we just can’t resist eating it. The best thing about Sheer Khurma is that, along with dates, it contains a variety of dry fruits, making it highly beneficial for our health. Sheer Khurma is also referred to as Sheer Khorma in some places. In Persian, “Sheer” means “milk” and “Khorma” means “dates.” Not only for Eid, but Sheer Khurma can also be made during the winter season, as it provides internal warmth due to the richness of dry fruits and dates.

When it comes to Seviyan Kheer and Sheer Khurma, the preparation method is almost the same, but the addition of dates makes the key difference. Dates add an original sweetness and change the texture, making it unique and special.

If the milk is full-fat, the taste of the recipe can be significantly enhanced. However, if the milk is thin, you can add milkmaid or plain khoya to improve the taste. Now, let me tell you the benefits of dates. Whether raw or ripe, dates are beneficial for the body. They help with digestion and cleanse the blood. Since they are considered “hot” in nature, they are typically consumed in cold weather. Dates are rich in essential nutrients like protein, fat, potassium, magnesium, iron, and more. However, some people may not prefer dates, and they can still consume them by boiling them in milk or preparing Sheer Khurma.

Milk – 1 liter
Seviyan (vermicelli) – 100 grams
Ghee – 2 tablespoons
Dates – 8-10
Almonds, pistachios, cashews, raisins, chironji – 30 grams
Milkmaid – 100 grams
Sugar – 25 grams
Cardamom – 3-4
Saffron strands – for decoration
Rose petals – for decoration

How to  make eid special sheer khurma

To prepare Sheer Khurma, take a non-stick pan and bring the milk to a boil. Once the milk boils, cut the dates into small pieces and add them to the milk. Cook the dates in the milk until they soften.

Meanwhile, take another pan and heat ghee in it. Add the seviyan (vermicelli) and roast them in the ghee. Remove the roasted seviyan and set them aside on a plate.

Reheat the ghee in the pan and add the chopped dry fruits. Roast the dry fruits and set them aside on another plate.

Add the roasted seviyan to the milk and cook until they are soft. Once the seviyan are cooked, add condensed milk and sugar to the mixture. Cook for 5-10 minutes.

Finally, mix in cardamom powder and the roasted dry fruits. Turn off the flame.

Your Eid special Sheer Khurma is now ready to serve.

Tips

For making Sheer Khurma, we have used non-fat milk here, as condensed milk (Milkmaid) helps thicken the milk. If you do not wish to use condensed milk, you can opt for full-fat milk and increase the amount of sugar accordingly.

Both dates and condensed milk contain ample sweetness. Therefore, you can adjust the sugar quantity in Sheer Khurma according to your taste preferences.

If you are using full-fat milk to prepare Sheer Khurma, ensure you stir the milk continuously in the pan; otherwise, the milk may stick to the pan and ruin the recipe.

You can adjust the quantity of dry fruits as per your preference.
