How to make mutton curry

To make Mutton Curry, first wash the mutton thoroughly with clean water 3-4 times and set it aside. In another bowl, clean the ginger and garlic, rinse them with water, and grind them into a fine paste. Heat oil in a pressure cooker. Once the oil is hot, add all the whole spices—bay leaves, black pepper, cloves, and cardamom—followed by the onions. Sauté the onions on high heat until they turn light brown. Once the onions are browned, add the mutton and sauté it on medium-high heat for about 5 minutes.

Now, add the ginger-garlic paste and mix it well. Add the spices—salt, turmeric, red chili powder, and coriander powder—and mix with a little water. Then, add the yogurt and mix it all together. Close the lid of the pressure cooker and let it cook for 3-4 whistles. Turn off the heat and let the cooker cool down. Once cooled, open the lid and check if the mutton is cooked.

Turn the heat to low and place the cooker back on the stove. Add Maggi masala or mutton masala and let it cook on low heat for 10 minutes. Mix it well and turn off the heat. Your amazing mutton curry is ready! You can serve it with roti or rice.

Tips

You can also use tomatoes instead of yogurt in the mutton curry.

If the mutton is not cooked even after 3-4 whistles, you can cook it on medium heat for one more whistle. After that, add the mutton masala and let it cook on low heat for 10 minutes. If you don’t have mutton masala, you can use Maggi masala as a substitute.

To thicken the gravy of the mutton, you can add cashew paste. You can adjust the quantity of the spices according to your taste.

FAQ

Yes, you can use the store-bought ginger-garlic paste for making mutton curry. However, I have prepared the paste using fresh ginger and garlic here. It may take a little extra time, but the taste of the curry is much better when made with fresh ingredients. When buying any packaged products from the market, make sure to check the expiration date on the packet to avoid wasting your time and effort.
