Rabri cake is made by preparing rabri separately and then spreading it generously on the cake from all sides. While eating rabri cake is as delightful as it sounds, making it is even simpler.

In rabri cake, you can choose to frost the cake with cream on all sides and place rabri in the middle. Rabri cake can also be made in different flavors, such as mango rabri cake, pistachio rabri cake, etc.

In this, you can add any flavor of your choice. To make the rabri cake, I have used an eggless sponge here.

Ingredients

Flour – 1 cup
Baking powder – 1 teaspoon
Baking soda – 1/4 teaspoon
Yogurt – 1/2 cup
Oil – 1/4 cup
Milk powder – 1/4 cup
Powdered sugar – 1/2 cup
Milk – As required
Vanilla essence – 4-5 drops

For the rabri:
Milk – 2 liters
Milk powder – 2 tablespoons
Custard powder – 1 teaspoon
Cardamom powder – 1 teaspoon
Sugar – 1/2 cup

How to make rabdi cake

To make the cake, in one bowl, add flour, baking powder, baking soda, and milk powder. Mix it well with a spoon and set it aside. In another bowl, add oil and yogurt, and whisk it well. Now, add powdered sugar to this mixture and whisk it well again.

Now, add 4-5 drops of vanilla essence to this mixture. Gradually add the flour mixture to it, ensuring you add it in small portions at a time to avoid lumps. Use the cut and fold method to gently mix all the flour into the batter.

Now, gradually add a little water to achieve a smooth batter consistency. Grease a cake tin by applying a little oil on all sides. Then, sprinkle flour in the tin to form a thin layer on the sides. Pour the cake batter into the tin and bake it in a preheated oven at 180°C for 30-35 minutes.

How to make rabdi

To make rabri, heat milk in a pan. Once the milk starts boiling, add cardamom powder, milk powder, and the custard slurry to it. Keep stirring well. Cook on medium heat, continuously stirring. When a good layer of cream forms on the milk and it starts to thicken, add sugar. Stir it well for another 10 minutes. Turn off the gas flame. The rabri is ready.

How to apply rabdi on cake

To apply rabri on the cake, remove the top layer of the cake. Now, use a fork to poke it gently so that the rabri can soak in properly. Spread the rabri evenly on all sides of the cake. The rabri cake is ready.

Tips

You can store the rabri cake in the fridge for up to 2 days and enjoy it.

For making rabri, full-fat milk is typically used, but since custard powder also thickens the milk, you can make rabri with regular homemade milk as well.

To make the custard slurry, dissolve one teaspoon of custard powder in water and then add it to the milk. Avoid adding custard powder directly to the milk, as it can form lumps.

Before adding the custard slurry to the milk, mix it well with a spoon to ensure it’s smooth.
