Badam Halwa is a traditional Indian sweet that is both delicious and nutritious. It is primarily made from almonds, milk, ghee, and sugar. First, almonds are soaked in water to remove their skin, and then they are finely grind.

This almond paste is roasted in ghee on a low flame, enhancing its aroma and flavor. Then, milk is added, and it is cooked until it thickens. Sugar is added to make it sweeter, and saffron and cardamom powder are incorporated to give it a special fragrance and taste.

Badam Halwa is especially made in the winter season as it provides warmth and energy to the body. It is also prepared during festivals, weddings, and other special occasions. Its golden color and creamy texture make it a favorite among everyone. When served hot, its taste becomes even more irresistible.

Badam Halwa is garnished with chopped almonds and pistachios, enhancing its appeal. Not only is it delicious, but it also retains all the nutritional benefits of almonds, which are good for health. However, I don’t enjoy almonds much. 

Before making almond halwa, I too had a question in my mind about how it would taste. But believe me, even though I don’t like almonds, almond halwa has made its way into my favorite list of sweets. It tastes so delicious.

When you make it yourself and taste it, you’ll truly know its real flavor. I had the pleasure of tasting hot almond halwa during the rainy season. The refreshing rain outside and the hot halwa inside, with the aroma of ghee, the flavor of almonds, the sweetness of sugar, and the garnish of pistachios—it’s an experience you won’t forget.

Soaked Almonds – 1 cup

Ghee – 1/2 cup

unsweetened Khoya (fikha mawa) – 1/2 cup

Milk – 1 glass

Sugar – 1/2 cup or to taste

Cardamom – 1/2 teaspoon

Saffron strands

Pistachios – for garnish

How to make almond pudding 

To make Badam Halwa, soak the almonds in water overnight. The next morning, peel the almonds. In a grinder, grind the peeled almonds with a little milk into a coarse paste. Now, heat ghee in a non-stick pan. Once the ghee is hot, add the almond paste and stir continuously until it turns brown in color and starts releasing a nice aroma.

Now, grate the unsweetened khoya and add it to the almond paste. Mix it well. Once the khoya is fully combined with the almonds, add the milk. Keep stirring on low to medium heat. When the milk starts to reduce, add cardamom powder and sugar, and continue stirring. Finally, add the saffron strands. When the halwa starts to leave the sides of the pan, turn off the heat. Drizzle some ghee on top of the hot halwa and garnish with pistachios. Serve the delicious Badam Halwa hot.

Tips

Stir the almonds continuously on low heat at short intervals until they turn golden brown. Otherwise, the halwa might stick to the bottom of the pan.

Make sure to taste the almonds once. Bitter almonds can spoil the taste of the halwa.

If you don’t have mawa, you can skip it as well.
