How to make aloo tikki chaat

First, mash the boiled potatoes. Add salt, red chili powder, chaat masala, dry ginger powder, garam masala, black salt, cumin powder, and carom seeds to the mashed potatoes and mix well. Finally, add breadcrumbs to the mixture, mix everything thoroughly, and shape it into round tikkis. Heat some oil in a non-stick pan and fry the tikkis until they become crispy and golden brown. Meanwhile, in a bowl, mix sugar into fresh yogurt and whisk it until smooth and creamy.

In a bowl, place the fried Aloo Tikkis. Top them with yogurt, sweet chutney, green chutney, salt, red chili powder, cumin powder, and chaat masala. Garnish with fresh coriander leaves. Add a little bit of besan sev (chickpea flour vermicelli) and namkeen boondi (crispy gram flour balls) on top. Serve the chilled, flavorful chaat immediately and enjoy.

Tips

Always use fresh yogurt for the best taste and enjoyment of the chaat.

Instead of breadcrumbs, you can also use cornflour to bind the tikkis.

For the sweet chutney, you can use tamarind as an alternative. I’ve made the sweet chutney here using dry mango powder.

You can adjust all the spices according to your taste preferences.
