Talking about stir-fried chili rice won’t do it justice—you need to taste it to truly appreciate its delicious flavor. As the name suggests, Chili Rice is a bit on the spicier side. However, when paired with gravy Manchurian, it creates a flavor combination that’s absolutely delightful.

Instead of using red chili powder, I have added a paste of desi chilies, along with plenty of vegetables. This not only makes it spicy but also incredibly delicious. It doesn’t take much time to prepare. If we have all the ingredients available, it can be made very quickly.

Be it a kids’ tiffin box, office lunch, home lunch, or dinner time, for family gatherings or small parties—stir-fried chili rice is a dish you can prepare without a second thought. Talking about my preferences, I absolutely love all the dishes my mom cooks. Whether it’s a simple dal or a restaurant-style dish, they’re all incredible. But stir-fried chili rice has its own special charm.

The stir-fried chili rice my mom makes is absolutely unbeatable, and I can never say no to it. After all, spicy food is a hallmark of Rajasthan, and while I don’t enjoy overly spicy dishes, I do like a bit of spice in my meals—it adds that extra zing.

Rice – 3 cups

Kashmiri chili paste – 1 teaspoon

Bay leaves – 2-3

Cinnamon – 3-4 small pieces

Cloves – 2

Cumin – 1/2 teaspoon

Asafoetida – 1/4 teaspoon

Soy sauce – 2 teaspoons

Vinegar – 1/2 teaspoon

Black pepper powder – as per taste

Salt – as per taste

Cabbage – 1/2

Bell pepper – 1 large

Baby corn – 3-4

Zucchini – 1/2

Lemon juice – 1 teaspoon

Mint leaves

Coriander leaves – for garnishing

How to make stir fried chilli rice

To make stir-fried rice, first wash the rice twice with clean water. In a separate pot, add 3 cups of water, salt, oil, and lemon juice. Once the water starts boiling, add the washed rice. After 2-3 boils, turn off the gas flame. Drain the rice and discard the remaining water.

In a pan, heat some oil and add bay leaves, cloves, cinnamon, cumin, and asafoetida. Then, add baby corn, cabbage, zucchini, and bell pepper, and cook them for 5-7 minutes with a lid on. After that, remove the lid and add Kashmiri chili paste, salt, black pepper powder, soy sauce, vinegar, and mint leaves. Mix everything well. Add the cooked rice on top and mix once again. Garnish with fresh coriander leaves and serve hot.

Tips

To prevent the rice grains from sticking together, we added lemon juice before boiling the rice.

Take 8-10 Kashmiri red chilies and soak them in water for 10-15 minutes.

After soaking, heat them on the gas for 5-7 minutes.

Then, put the chilies in a mixer jar and add a little water to make a smooth paste.
