About Shahi tukda

Shahi Tukda, as the name suggests, is a very special and unique dish. This recipe is special for those who are fond of sweets and whose day doesn’t feel complete without having something sweet. Shahi Tukda is actually a very easy recipe.

And it doesn’t require much effort to make. Eating fried bread topped with creamy, sweet rabri is truly delightful. During the summer season, having this sweet dish feels wonderful because of the contrast between the warm bread and the cold rabri on top.

Topping it with your favorite chopped dry fruits and a few rose petals for decoration makes it a truly heart-touching dish. Shahi Tukda is a Hyderabadi dish, also known as “Double Ka Meetha.” It’s called that because it’s typically soaked in both syrup and rabri. However, in my recipe, I’ve soaked it only in the delicious rabri.

The slight mildness in the flavor balances out the sweetness perfectly, giving it a more balanced taste. If I were to share my personal preference, I’d say that I enjoy the bread soaked only in the rabri—no syrup needed for me! This adds just the right amount of richness without being overwhelmingly sweet.

I don’t like soaking it in syrup. Before soaking the bread in rabri, I have fried it in oil. It can also be fried in ghee to make it crispy, so that it doesn’t break or crumble when soaked in syrup or rabri.

And let the bread soak well in the rabri or syrup. So, come along with me. Let’s start making Shahi Tukda. How to make Shahi tukda

To make Shahi Tukda, start by cutting the bread slices into halves. Heat oil in a pan and fry the bread slices one by one until golden brown.

In a separate non-stick pan, pour the milk and let it come to a boil. Once the milk starts boiling, add sugar and keep stirring it on low flame until the milk thickens to a rabri-like consistency.

Once the rabri is ready, add chopped dry fruits and allow it to cool. Pour the chilled rabri generously over the warm fried bread slices and enjoy the delicious Shahi Tukda.

Tips

Before frying the bread, leave it out in the air for 5 minutes. This helps reduce the amount of oil the bread absorbs during frying.

If you prefer a sweeter taste, you can increase the quantity of sugar in the milk mixture accordingly.
