How to make creamy rice kheer

First, take full-fat milk in a vessel. Let the milk boil for 3-4 boils. On the other hand, wash the rice thoroughly with clean water twice and soak it for 15-20 minutes. The milk has come to a boil. Our rice has also soaked in water. Now, drain the water from the rice and add the rice to the boiling milk. Stir the milk and rice well with a spoon and let it come to a boil again. Now, reduce the heat and let the rice cook. Once the rice is cooked and soft, soak the saffron strands in a little milk for 5-7 minutes. Add crushed cardamom and saffron strands to the milk. Then, add sugar and stir the mixture well with a spatula. Let it cook for 5-10 minutes to ensure the sugar dissolves completely. Our rice kheer is cooked and ready. Now, add chopped cashews, almonds, and pistachios to it. Give a quick stir and turn off the heat. Our delicious rice kheer is ready. You can enjoy it hot or chilled.

Tips

When making rice kheer, never add sugar with the rice, as it will prevent the rice from cooking properly, and the kheer will not turn out well.

You can adjust the amount of sugar according to your taste preference.

FAQ

Is it necessary to use basmati rice for making rice kheer?

No, it is not essential to use basmati or long-grain rice for rice kheer. Here, we have used small rice grains, also called “Kaani,” which blend well in the kheer and give it a creamy texture when mixed with milk. You can use basmati rice if you prefer.

Is it necessary to soak the rice in water?

Soaking the rice for a short time helps soften the rice grains, making the kheer cook faster.

Can you make variations in rice kheer?

Yes, you can! You can add a few drops of rose water and kewra essence for a fragrant twist.

What should be done if the milk burns while making rice kheer?

To avoid burning, use a thick-bottomed or non-stick pan. If you’re using a thin-bottomed pan, make sure to stir the kheer continuously with a spatula, so the milk doesn’t burn, and the kheer turns out perfectly.
