Potatoes – 1 pav
Onions – 2 medium-sized
Capsicum (Bell Pepper) – 1 medium-sized
Green Peas – 100-150 grams
Cauliflower – 1/2 pav
Carrot – 1 medium-sized, cut into long pieces
Tomatoes – 2-3 medium-sized
Ginger-garlic and green chili paste
Salt – to taste
Red chili powder – 1/2 teaspoon
Turmeric – 1/2 teaspoon
Kasuri methi – 2 teaspoons
Garam masala – 1/2 teaspoon
Pav bhaji masala – 1-1 1/2 teaspoons
Kashmiri red chili powder – 1/2 teaspoon
Butter – 100 grams

How to make bhaji

To make pav bhaji, first, take a pressure cooker and add potatoes. Wait for 3 whistles. Once the potatoes are boiled, add cauliflower, carrots, and peas to the cooker and cook for 2 more whistles.

Meanwhile, take a mixer jar and make a paste of ginger, garlic, and green chilies.

Now, take a non-stick pan, add butter, and heat it. Once the butter is melted, add the ginger, garlic, and green chili paste. Cook for 3-4 minutes, mixing well. Then, add the chopped onions and sauté until they turn light brown.

Next, add the tomato puree and cook for another 3-4 minutes on high heat. After that, add kasuri methi. Once the kasuri methi is mixed in, add the mashed potatoes and boiled vegetables. Mix everything well with a spatula.

Now, add salt, red chili powder, turmeric, pav bhaji masala, and Kashmiri red chili powder. Add 1 cup of water and mix well. Use a masher to mash the vegetables.

Once all the vegetables are mashed, add garam masala on top and let it cook for another 5 minutes on low to medium heat.

After 5 minutes, turn off the gas. The pav bhaji is ready! Now, let’s move on to preparing the pav.

How to bake pav

To heat the pav, take a non-stick tawa. First, add butter to it and let it melt. Once the butter is melted, cut the pav in the center with a knife and place it on the tawa, cut side down. Once the pav is toasted on one side, flip it over. Add a little butter on the top side. The pav is now ready to be served hot with the bhaji.

Tips

Before boiling the potatoes and vegetables, make sure to wash them thoroughly with clean water.

For making pav bhaji, we have used unsalted butter here. You can also use Amul salted butter if you prefer. Just be sure to reduce the amount of salt accordingly.

Kashmiri red chili is used for color and a spicy taste. It’s completely optional, so you can skip it if you like.

Pav bhaji can be served with butter, chopped onions, fresh coriander, and cut lemon. This enhances the flavor and makes it even tastier.

Pav bhaji can be healthy when consumed occasionally. However, for those who do not want to compromise on health, a better option could be to use pav made from whole wheat flour instead of refined flour. Additionally, the bhaji can be made with oil instead of butter.
