All-purpose flour (Maida) – 1 ¾ cups

Baking powder – 2 teaspoons

Baking soda – 1 teaspoon

Oil – 1 cup

Powdered sugar – ¾ cup

Yogurt – 1 cup

Lemon juice – 1 tablespoon

Lemon zest – ½ teaspoon

How to make lemon cake

To make the lemon cake, mix the flour, baking powder, and baking soda in a bowl. In another bowl, add oil and powdered sugar, and beat it with a beater until the sugar is completely dissolved. Now add the yogurt and beat it with the beater. Add the lemon juice and grated lemon zest. Slowly add the flour mixture and make sure there are no lumps in the batter. Add a little water if needed. Grease the cake tin with some oil and pour the cake batter into it. Preheat the oven and bake the cake at 180°C for 30-35 minutes. Check with a toothpick – if it comes out clean, the cake is done. Once the cake is slightly warm, you can add the glaze on top.

How to make glaze

To make the glaze, mix 3 tablespoons of icing sugar and 3 tablespoons of lemon juice in a bowl. Stir it well until smooth. Once the cake is slightly warm and can be touched, pour the glaze evenly over the cake.

How to bake a cake on gas?

To bake a cake on gas, take a heavy-bottomed kadhai (wok) and add salt or a layer of sand at the bottom. Preheat it for about 10 minutes. Once preheated, place the cake tin inside the kadhai and cover it with a lid. Bake the cake on low to medium heat for 40-45 minutes.

How to check if the cake is baked?

To check if the cake is done, insert a toothpick into the center. If it comes out clean, the cake is ready.

How to avoid lumps in the cake batter?

To avoid lumps in the batter, add the flour gradually, not all at once. Adding flour in small portions prevents the formation of lumps in the cake batter.

Will adding lemon zest make the batter bitter?

You should only grate the yellow part of the lemon peel and avoid the white part, as it is bitter. Grate the yellow part lightly and add it to the batter for flavor without bitterness.
