Ingredients

All-Purpose Flour (Maida) – 3/4 cup

Caster Sugar or Powdered Sugar – 1/2 cup + 2 tablespoons

Butter – 1/2 cup

Baking Powder – 1 teaspoon

Baking Soda – 1/2 teaspoon

Milk – as required

Apricot Jam – 3 tablespoons

For Custard:

Full-Fat Milk – 1/2 liter

Sugar – 1/4 cup

Custard Powder – 2 teaspoons

Whipped Cream – 1 cup

How to make apricot pudding

To make apricot pudding, first prepare the apricot jam. For the pudding, in a bowl, cream the butter and sugar together until the butter becomes light in color and fluffy. In another bowl, mix the flour, baking powder, and baking soda well. Set it aside. Gradually add the flour mixture to the butter batter using the cut and fold method, mixing gently.

Gradually add milk as needed to the batter. The cake batter should neither be too thick nor too thin. The consistency of the batter should be like a normal cake batter.

Now, take a cake tin, grease it with oil, on the other side, add appricot jam into cake batter, mix it. and pour into cake tin.  Bake it in a preheated oven at 180°C for 25-30 minutes. Once the cake is baked, insert a toothpick into the center. If it comes out clean, the cake is ready.

How to make custard milk

To make the custard, take full-fat milk in a pan and bring it to a boil. Once it starts boiling, add the custard slurry and keep stirring continuously. Cook it until it thickens and is ready to set like pudding. When it starts thickening, add sugar and cook until the sugar is fully dissolved. Once done, turn off the gas. The custard is now ready.

How to make custard slurry?

Making custard slurry is very easy. Take 2 teaspoons of custard powder and mix it well in slightly warm milk to ensure there are no lumps. Once mixed, add this slurry to the boiling milk. Before adding the slurry to the milk, mix it again well in the bowl to make sure the custard powder at the bottom of the bowl is fully incorporated with the milk.

If you prefer, you can add a layer of apricot jam in the middle of the pudding instead of using apricot cake. This will give the pudding a slight tangy flavor.
