Ingredients

Apricots – 12-15
Sugar – 1 cup
Water – 1/2 cup
Lemon juice – 2 tablespoons
Cinnamon – 1 stick
Cardamom – 2 pods

How to make apricot jam

To make apricot jam, first wash the fresh apricots with clean water. Cut them and remove the pits. In a non-stick pan, add the fresh apricots along with 1/2 cup of water, a piece of cinnamon, and green cardamom. Cover the pan and cook it on low heat. Once the apricots start to soften and the water begins to boil, add the sugar. Mix it well and cook with the lid on, so that the apricots soften properly in the steam.

Once the apricots are softened, add the lemon juice. The jam is now ready. To check the consistency, take a little jam on a plate and tilt the plate. If the jam holds its shape and doesn’t move around, it means the jam is ready. Let it cool, then transfer it to a jar and refrigerate it. Your apricot jam is ready.

Tips

Apricot jam can be made using both fresh or dried apricots.

For this apricot jam, I have used raw sugar (bura), but you can also use white sugar if you prefer.

Always use sterilized glass jars for storing the jam, as this reduces the chances of the jam spoiling.
