After this, add milk and cooked on a low flame until the bottle gourd softens completely and absorbs all the milk. Once the mixture thickens, add sugar and cooked until it dissolves and blends well into the halwa.

To enhance the flavor, cardamom powder and dry fruits like almonds, cashews, and raisins are added. The halwa is cooked until the ghee separates from the sides.

Bottle gourd halwa is not only delicious in taste but also beneficial for health, as bottle gourd has a high water content and provides a cooling effect to the body. It can be served both warm and chilled.

Bottle gourd- 3/4 cup

Milk- 1/2 cup

Clarified butter (ghee)- 1/8 cup

Unsweetened khoya (mawa)- 1/2 cup

Saffron threads- 5-6

Sugar- 1/2 cup or less (as per taste)

Cardamom powder- 1/2 teaspoon

Pistachio- for garnishing

Cashew- for garnishing

How to make bottle gourd pudding 

 Heat ghee in a pan or kadhai. Add the grated bottle gourd and sauté it well until all the water evaporates from the bottle gourd.  Pour milk and stir the mixture. Cook until the milk begins to reduce. Add the khoya and mix it thoroughly. Stir sugar and saffron-infused milk. Continue cooking until the moisture evaporates and the halwa thickens.  Once the halwa is ready, sprinkle chopped pistachios, cashews, and cardamom powder on top of halwa. 

Tips

While grating the bottle gourd, make sure to remove the seed portion. 

You can adjust the quantity of sugar according to your taste preference.  

Ensure that the bottle gourd is well-sautéed in ghee before adding milk. This step is crucial for achieving the perfect flavor . 

To enhance the color of the halwa, you can add 2 drops of green food color. However, avoid unnecessary use of artificial colors for a more natural and healthy dessert.
