How to make mix fruit cake

In a bowl, beat the butter and powdered sugar until it becomes fluffy.

Now, add yogurt to it and mix well. Add vanilla essence.

Gradually add the all-purpose flour in small batches to avoid lumps in the cake batter. Add 1-2 tablespoons of milk to ensure the batter doesn’t become too hard.

Add the baking powder and baking soda, and use the cut and fold method to mix. Add the dried mixed fruits. You can also add choco chips, though it’s completely optional.

Grease the cake mold with oil. Pour the cake batter into the mold. Tap the mold 4-5 times. Preheat the oven and bake at 180°C for 25-30 minutes.

To check if the fruit cake is ready, insert a toothpick. If it comes out clean, the cake is done.

Tips

Adding 1 tablespoon of flour to the dried mixed fruits prevents them from sticking to the bottom of the fruit cake.

Using the cut and fold method helps the cake rise well.

Both unsalted and salted butter can be used.
