Ingredients

Unsweetened mawa (khoya) – 1 cup

Sugar – 1/2 cup

For the filling:

Pistachio powder – 1/2 cup

Powdered sugar – 2 tablespoons

Milk powder – 2 tablespoons

Milk – as needed

How to make Mawa pista roll

 In a non-stick pan, grate the mawa. Cook it on low heat until it softens slightly. Add sugar to the mawa and cook it until the mixture starts to leave the sides of the pan. Once done, transfer the mawa to a plate and let it cool. In another bowl, mix pistachio powder, powdered sugar, and milk powder. Stir well until combined.

 Take a large poly bag and cut it between the two sides. Apply a little ghee on the poly bag to prevent sticking. Place the mawa mixture on the poly bag in such a way that the top part of the poly bag covers the roll. Gently roll the mawa mixture with a rolling pin.  Slowly peel off the top part of the poly bag from the rolled mawa. Trim the edges of the roll to make them even. Mix a little milk to the pistachio filling to get a dough-like consistency.

Shape the prepared pistachio filling into a long roll using your hands.  roll the completely  mawa layer from top to bottom. Cut it into long pieces, similar to Kaju Pista Rolls. You can garnish it with silver leaf and chopped pistachios before serving.

Tips

When you roast the mawa, it will turn a darker color because no white color chemicals have been used in it.

you can use few drops of green color to make filling more greener.  However, I have skipped using food color.

Before using the mawa, grate it once to break any lumps and ensure a smooth texture.
