Unsalted Butter: 100 grams

Powdered Sugar: 3/4 cup

Milk Powder: 1/4 cup

All-Purpose Flour (Maida): 1 and 1/2 cups

Baking Powder: 1 teaspoon

Baking Soda: 1/4 teaspoon

Milk: 1 teaspoon or as required

Cashews: For mixing into the batter and garnishing on top

How to make cashew cookies

In a bowl, take unsalted butter and powdered sugar. Using a beater, mix them until soft and light. Add milk powder, all-purpose flour (maida), baking powder, baking soda, and chopped cashews to the bowl. Mix gently with a spatula or light hands. If needed, add a little milk to bring the dough together and mix gently. Shape the batter into small cookies.

Place the shaped cookies on a microwave-safe plate. Lightly brush with some water on the cookies using a brush or your fingers. Garnish them with cashews and press gently. Bake the cookies in a preheated oven at 180°C (356°F) for 15-20 minutes. Once baked, remove the cashew biscuits from the oven and place them on a cooling wire rack. After the cookies cool completely, store them in an airtight container.

Tips

 To check if the cookies are baked, look at the bottom of a cookie. If it has turned light brown, it’s time to take them out. Avoid over-browning, as it can make the cookies taste bitter. 

If the bottom of a cookie is slightly overbaked, you can gently scrape off the browned part using a grater. This will remove any bitterness and make the cookies enjoyable. 

If you don’t have a cooling wire rack, you can use an upside-down flour sieve as an alternative to cool the cookies evenly.
